To a pot add:
– 2 tbsp olive oil
– 4 cloves garlic
– 1 small chopped onion
– Dried spices 1/4 tsp each: rosemary, thyme, Italian seasoning *optional generous pinch of red pepper flakes
– Salt & pepper to taste, or about 1/2 tsp each
Sauté! About 5 minutes
Then add:
– 4 large carrots, diced
– 4 celery stalks, chopped
– 1-2 cups frozen spinach or kale (or fresh!)
– 1 can of diced tomatoes (with the juice)
– 2 tsp tomato paste *optional
– 4 cups vegetable broth
Bring to low boil then turn heat to medium for about 20-30min until vegetables are cooked
Then Add:
– 1 can each drained & rinsed white beans, kidney beans, and chickpeas or pinot beans
If you want to add pasta (regular or GF), bring the whole soup to a boil and add a 16oz of your favorite pasta. Cook for 8 minutes and serve.
