Dr. Picard’s Dinner Rolls

To a bowl or kitchen aid add:
– 3/4 cup warm-to-hot water
– 1/4 cup olive oil
– 2 TBSP honey (or sugar)
– 1 TBSP instant yeast or active dry yeast but see note below

Stir and dissolve yeast. *If you are using active yeast, stir the above and cover with a kitchen towel for 5-10 min until foamy. If using instant yeast, you can move in to the next step immediately:

Add:
– 1/4 cup plant milk (I like soy)
– 1 tsp salt
– 3-3.5 cups flour, can mix AP/bread and whole wheat. If using whole wheat be sure to leave extra time to rise
*you want to add enough flour so the dough sticks to itself and not the sides of the bowl

Knead for 5-10 minutes and add spices if desired, like 1-2 TBSP minced garlic, or 1 TBSP dried spice like Oregano, Italian spices, rosemary

Let rise until double in size, 1-2 hours.
Then portion out 8-10 even pieces, pinch, shape, and roll in to balls. Put them in a greased baking dish and cover with a towel while the oven preheats ~15 min.

Optional: brush tops with plant milk or egg wash.

Bake at 425 for about 16-18 min.
